My family dinner table would never consist of creamy mushroom pasta, but my memories of rocking up to Ruby Tuesday and getting an Alfredo serves this moment.
Creamy pasta is one of the easiest things to make and this one will probably take you just 20 mins! If you don’t like mushrooms, grow up (just joking don’t get mad); it’s a super adaptable base recipe, add protein, other veggies etc!

Ingredients
80g spaghetti
5 chestnut mushrooms sliced
1 tbsp butter
1 tsp olive oil
2 cloves garlic crushed
1/2 cup cream
1/4 cup grated parmesan
1 tbsp chopped chives
1/4 tsp chicken powder
Salt and white pepper
Dried parsley
Method
Cook pasta in pot of salted water, drain and set aside when al dente
Fry mushrooms in butter and olive oil until light golden, add crushed garlic and fry til fragrant
Add cream, spaghetti, parmesan and pasta water (as needed). Cook whilst stirring until fully incorporated
Season with chicken powder, dried parsley, salt & white pepper and add chives in the end
Plate pasta and garnish with chopped chives and grated parmesan and serve ✨
